Rubs and Sauces

Labels and more labels! Do you read your labels before you buy and thusly put the food into your body? What you put into your body will affect how you feel and your overall health. Now I am sure some of you know that, but a little reminder won't hurt. I want to compare a well know product and its label to one of my labels and you can see the difference.

Rubs and Sauces

Wow is February going to be a full  month!  Feb 6th is the super bowl and then Feb 14th is Valentine day. Since I have started my recipe of the month I will give you a great party recipe or two for your fun celebrations. They are both centered around Guacamole.
First recipe:
                       1. 3 avocados- peeled, pitted and mashed.
                       2. 3 Tablespoons of fresh cilantro diced finely or chopped.
                       3. 1 fresh lime juiced.
                       4. 1  teaspoon of salt, I prefer Kosher or Sea salt.
                       5. 1/2 cup of onion. I prefer white or you can use yellow onion.
                       6. 2 Roma (plum) tomatoes diced.
                       7. 1 teaspoon of minced garlic
                       8. 1 pinch of ground cayenne pepper or to taste ( optional)
                       9.  Add 1/2 tablespoon of Uncle Milts Mexican seasoning (optional)

                        Directions: In a medium bowl, mash together the avocados, lime juice,and salt.
Mix in the onion, cilantro, tomatoes, and garlic. Next stir in the cayenne pepper. Refrigerate 1 hour for best flavor or serve immediately.

Second recipe:
                        1. Prepare the above avocado as described.
                        2. Add Uncle Milt's Wyo-mex salzza and mix well into the avocado.
                        3. Top with sour cream and a small amount of cilantro.
                        4.  Serve immediately or can refrigerate  for 1 hour and then serve.

Rubs and Sauces

I decided that I will have a recipe of the month starting in  January 2011. So my recipe for you this month is:
                ******** Beef Tacos*******

                          1. 1 pound of ground beef
                          2. 1 cup of Uncle MIlt's Wyo-Mex Salazza.
                          3. 12 taco shells or fresh tortillas  and warm them.
                          4. 1 med tomato chopped, about 1 cup.
                          5. 1 teaspoon of Uncle Milt's taco seasoning.
 
                           Directions: Cook the beef in a 10inch skillet over medium to high heat until it's well browned, stirring in the taco seasoning and stir often to mix in the beef and seasoning. Pour off any fat.
                           You can stir in the salazza into the meat or use as a separate add on to your taco. If you stir in the salazza cook with the meat until it is hot and bubbling. divide the meat mixture among the taco shells. Top with  cheese, tomato, onions and lettuce. Of course you can add anything you wish according to your taste.
                           Plate it and enjoy!

Howdy friends,
                             Just a note to remind you of my special this month. I have reduced my Garlic peppercorn sauce down to $4.00 a bottle. A great way to use this sauce is to add your favorite jam or jelly and mix in real good. Next baste your meat with this sauce, let it sit for a time and then grill it. You will find a delightful taste added to you meat. Try it!
